Beilin reported that in a study of 300 subjects, with 85 professing to be strict vegetarians, the vegetarians were found to be leaner at all ages, with lower total cholesterol and higher HDL concentrations (1131S). Janelle and Barr studied 45 subjects and also reported that vegetarians demonstrated lower levels of cholesterol (183).
Cholesterol is a fatlike steroid alcohol, found in fats and oils. Fat, functions to smooth and round out bodily contours, and furnish a reserve supply of energy to the body (Dorland's 324, 615). Differences in fat intake between vegetarians and nonvegetarians, are not striking. Messina and Messina state that in the United States: fat intake ranges from about 34 percent to 38 percent of calories; lacto-ovo vegetarians consume about 30 percent to 36 percent fat; and vegans consume about 30 percent fat. Differences in levels of saturated and polyunsaturated fats vary (18). Janelle and Barr also failed to find large differences in fat consumption between vegetarians and nonvegetarians (183).
